Made with mix of green leaves / lettuce, yellow bell pepper, pomegranate and cashew cream, this salad is super delicious and super healthy! Named after actress Jennifer Aniston as it is probably one of her favorite salads; every time Jen is in Toronto we get an order for it (the actress is a well known healthy eater and we must admit that she look stunning!).
Cashews are packed with vitamins, minerals and antioxidants. These include vitamins E, K, and B6, along with minerals like copper, phosphorus, zinc, magnesium, iron, and selenium, all of which are important for maintaining good bodily function.
Yellow bell peppers are a good source of vitamin C. They also contain fiber, protein and iron.
pomegranates are a rich source of vitamin C and antioxidants, not to mention fiber and anti-inflammatory properties — but more than that, studies show that eating pomegranate can help protect against disease, like certain cancers and Alzheimer's.
